Dallas-Fort Worth restaurants are better planners than you are. They already have their Easter brunch menus locked and loaded […]

At a press conference in Houston, none of the three semifinalists from Dallas in the Best Chef – Southwest category were announced as finalists…

This morning, the James Beard Foundation announced this year’s finalists, and Dallas came up empty-handed. We had a good year for semifinalist nominations: Bruno Davaillon (Bullion), Regino Rojas (Purepecha Room by Revolver Taco), and David Uygur (Lucia and Macellaio) were up for Best Chef Southwest; The French Room for Outstanding Service; and Ricardo Sanchez (Bullion) […]

A few years ago, Bullion’s executive pastry chef Ricchi Sanchez would buy 1 pound of vanilla beans at a time for about $100. Today, he buys them by the ounce instead. “Right now, I get 4 ounces, or about 25 beans, for the same amount,” he says…

When it comes to a battle over which Texas city has the best new restaurants, Texas Monthly critic Patricia Sharpe says Dallas, Houston and Austin are pretty evenly matched. Aha! That’s nice to hear: James Beard nominations and national food stories have been hyperfocused on Houston.

A few decades ago, we were introduced to artisan bread by empire baking Company and then Village Baking Co. Now, a new batch of intrepid bakers is pushing the wild-yeast envelope. With long fermentation times, high hydration levels, and signature sourdough starters, they are turning levain into Instagram-worthy art..

Dallas has numerous restaurants listed as semifinalists for 2019 James Beard Awards. The regional semifinalists for the awards — sometimes referred to as the Oscars of the culinary world — were announced Wednesday.

The James Beard Foundation will be in Houston on March 27 to announce the finalists for its annual awards, which are considered the Oscars of the culinary world; they recognize achievements by chefs, bartenders, restaurant owners, media members, and more. Today, the James Beard Foundation announced its Restaurant and Chef Awards semifinalists for 2019. And this year, the list promises to be more diverse than years prior. Wednesday morning, the James Beard Foundation announced the semifinalists in its prestigious Chef and Restaurant Awards, and Texas has come out swinging. The state landed 27 entries in five cities. That’s the largest number ever for Texas, which claimed twenty semifinalists in 2018. (Another good year was 2013, when the state got 25 nods.) The […]

Semifinalists for the restaurant and chef awards were announced this morning, and leading off was Misti Norris, whose iconoclastic restaurant Petra and the Beast in East Dallas was in the top category of best new restaurant in the U.S. Ricardo “Ricchi” Sanchez of Bullion in Downtown Dallas was named a semifinalist for outstanding pastry chef, […]

It is no surprise to me that Ricardo “Ricchi” Sanchez is nominated for Best Pastry Chef for his work at Bullion. As I have lamented, it’s been a while since we’ve had strong contenders for the designation, aside from Maggie Huff, who has worked staunchly with Matt McCallister at FT33 and now at the soon-to-open […]

Beaumont native Ricardo “Ricchi” Sanchez has been nominated as a semifinalist for the James Beard Foundation’s 2019 Restaurant and Chef Awards in the Outstanding Pastry Chef category.

Sanchez, executive pastry chef at Bullion in Dallas, was at his home there Wednesday morning when a line cook from […]

Dallas will also be able to find out its its dining scene has finally “arrived” or not. Earlier today, the folks at the James Beard Foundation Awards revealed the semifinalists for the 2019 of their celebration of all things culinary across this fine nation, and Dallas received a whopping six nods in today’s reveal.

There are a lot of food awards begging for your attention and desiring to be the “Oscars of food”–like last week’s first ever World Restaurant Awards–but in America, that distinction largely falls on the James Beard Awards. And as the actual Oscars awards season has wound down, it’s time to kick food one into high […]

Awards season may have ended in Hollywood, but for the American restaurant industry, it’s just getting started. On February 27, culinary nonprofit the James Beard Foundation announced the semifinalists for its prestigious awards — and Austin nabbed eight spots on the list.

The James Beard Foundation will be in Houston next month to announce the finalists for its annual awards, which are considered the Oscars of the culinary world; they recognize achievements by chefs, bartenders, restaurant owners, media members, and more. When it does, several of the city’s chefs will be eagerly awaiting the news.

Last fall, the James Beard Foundation announced major changes to its award policies for 2019 in order to increase diversity and representation and make its awards more accessible. This week, the Foundation revealed the results of those efforts. The judging corps include 14 more people of color and 5 percent women, while 7 percent more […]

After an afternoon feasting on over 1,500 pounds of heritage breed pork raised on family farms, almost 600 guests, including chefs, somms, barkeeps, and notable judges, gathered at Cochon555 Dallas presented by Citi with full glasses to toast the Dallas “Prince of Pork” Chef Bruno Davaillon.

On Sunday, chef Bruno Davaillon of Bullion was named Prince of Pork at the Cochon555 regional competition held at the Four Seasons Resort and Club. He joined co-competitors Christof Syré of LAW at Four Seasons, last year’s winner David Uygur of Macellaio, Matthew Scott of Great Scott, and Josh Bonee of Fine China.

Cochon555 may be one of the best food events Dallas has to offer. For those unaware, Cochon555 is a celebration of heritage raised pork, and Dallas is the first stop on a nine-city tour where local chefs prepare their best pork dishes. This year’s event was held at Four Seasons Resort and Club Dallas at […]

If you learn one thing from this list, let it be that the city is made up of so much more than barbecue and Tex-Mex. Dallas chefs are bold and not afraid to try new things, and as a result, a list of elite establishments have risen to the top of the food chain, covering […]

“What does it look like to you?” my dining companion asked. “A lozenge? A spaceship? An Eberhard eraser?” In the year since Bullion opened downtown, the restaurant has become a defining feature of the Dallas dining scene, if not the city, and maybe a Rorschach test, too. Every Dallasite seems to see something different. I […]

As if we needed an excuse to knock off work early, Bullion’s elegant version of a happy hour, weekdays from 4 to 6:30 p.m., is just about irresistible. Called L’Apero (the aperitif) and served in the restaurant’s luxe bar and lounge, it offers a menu of small bites for $9 or less, along with cocktails […]

With the holidays right around the corner, finding a good place to drink on the cheap is especially important this time of year. You don’t have to settle for ice-cold cans of PBR and crappy vodka, either — it is, in fact, possible to drink fancy-schmancy cocktails in Dallas on the cheap

Bullion

With a focus on fine French classics with an approachable twist, Bullion is a great reminder that Dallas has so much more to offer than barbecue.

You have one. I have one. We all have one. Admit it or not (and whether it’s written down or firmly planted in your head), you have a bucket list. It exists. And, you’ve probably even crossed some things off of it — and likely added some more things.

By-the-glass wines consistently drive revenue in any restaurant program, but a little creativity is required when it comes to offering exceptional value to guests. Finding the wines that will sell like wildfire is the name of the game. SevenFifty Daily asked 20 U.S. sommeliers and wine directors to name a by-the-glass pour that they can’t keep in […]

In the October chapter of Where to Drink, Mondays are big, very big, with Monday-night specials dominating the field. There’s also one venue doing the “graduated” theme where the earlier you show up, the cheaper it is.

Look around at new construction in any dense American city and you’ll likely spot office towers with ground-floor transparency designed to engage the sidewalk and passersby. But nearly four decades ago, fortress-like boundaries were more de rigeuer in uber-corporate America. A byproduct of that’80s era, 400 Record in Dallas sported barriers ranging from a blocked-off perimeter to a […]

Bullion loves to celebrate everything French. Now, every Monday, the Bar at Bullion will offer French West Indies Tiki Monday. The French West Indies is the home to Agricole Rhum and refers to the seven territories currently under French sovereignty in the Antilles islands of the Caribbean.

Can there ever be too much gold? Not for Martin Brudnizki, who got his start in London and today creates some of the world’s hottest hospitality venues. The Hartland-Mackie family brought him to Dallas, where Gensler was renovating the Hartland-Mackies’ office tower, 400 Record, to feature an elevated pod to house a restaurant. Named Bullion, it would be an […]

If the average Dallas diner listed ways to get drunk at mealtime, wine might come in third. Any restaurant with any ambition at all has a list of house specialty cocktails, and the Texas craft beer revolution is still going strong — the region is opening at least 13 new breweries this year.

We first ranked the 100 best restaurants in Dallas in 2011. Since then, the scene has changed so rapidly that it’s required us update it every three months. Which is what we’re now doing.

The Eater 38 has returned, newly updated for the summer. For the uninitiated, this is a map intended to help answer that age-old question, “What’s for dinner?”

Ritzy restaurants are sprinkled throughout the Metroplex just waiting to wow guests with a premium culinary experience. But one shining newcomer has already proved to be a pillar in the local fine dining community. Bullion opened its doors last November and delighted Dallas diners with its gorgeous exterior, sleek interior and overall sophistication. Even bypassers can tell […]

Openings and closings are at a lull around Dallas in these sleepy mid-June days, but there’s still restaurant news to report. There is always restaurant news to report. There are new menus. New dishes. New drinks. New chefs.

In Wine Enthusiast magazine’s list of America’s 100 Best Wine Restaurants of 2018, three are from Dallas. That’s an impressive number, especially since the entire state of Texas totaled seven restaurants on the list.

It’s a good week for Dallas restaurant openings, covering all sorts of cuisines and neighborhoods. There’s also new menus, longer hours, and a burger battle underway.

With creative menus served in stunning settings, these new restaurants, in cities from Austin to Milan, have all paid as much attention to their design as to what they serve. Take interior inspiration, or book a tasting trip to these culinary stars.

Dallas has no shortage of swank, but few restaurants offer the kind of over-the-top luxury that Bullion brought to the city last year. Named Eater’s most gorgeous restaurant of the year in 2017, the sophistication of Chef Bruno Davaillon’s destination for chic French fare is all in the details.

While it’s pretty obvious that mothers work hard every day of the year, Mother’s Day comes but once a year. Make sure you celebrate how much the mother in your life is appreciated by treating her to one of these seven enticing menus and more for a chance to eat, play and enjoy the many […]

Spring has sprung and with it comes a slew of restaurant openings. In fact, there’s so many new arrivals on the Dallas area food scene right now, it’s almost impossible to keep up, much less narrow the list down to the ten best choices.

This month, goop hits Dallas’s Highland Park Village for the second time. We’ve spent time getting reacquainted with our favorite spots (the Rosewood Mansion, Forty Five Ten, you know who you are) as well as hunting down the best of the new openings (Bullion and Sachet, you guys are just the best). In true goop form, we’ve sipped […]

Home to the Central Business District and Dealey Plaza, Downtown Dallas welcomes millions of tourists each year, and that’s not including the thousands of Dallas-Fort Worth dwellers who live there or commute into the neighborhood every day for work. Also nearby is the Dallas Arts District, which attracts theatergoers and visual art enthusiasts alike.

When Chef Bruno Davaillon left the Rosewood Mansion, a lot of well-heeled taste buds went hungry for the Frenchman’s cuisine. Little did they know that there would be an oasis up ahead on the second level of the 400 Record (formerly known Belo Tower).  Correctly called Bullion, it’s easy to spot from the street thanks to its exterior […]

Dallas has no shortage of good spots to eat and drink at. Here, we’ve put together a list of Whitewaller favorites that will having you making a reservation.

Whether red or white, rose or bubbly, a glass of wine can take a dining experience to the next level. It’s the savvy restaurant that factors wine into the total mix.

March has arrived, which means that it’s time for a fresh update of the Eater Dallas Heatmap, a monthly guide to the city’s hottest restaurants intended to answer the age-old question: “Where should I eat tonight?”

Among all the bests we honor in our 2018 Tastemaker Awards, our annual event honoring the best in local food and drink, none is sweeter than this: Best Pastry Chef.

When he left the kitchen at Rosewood Mansion on Turtle Creek two years ago, questions were rife about the future of Michelin-starred chef Bruno Davaillon. Was he going to stay in Dallas? Go ? The gastronomic scene of the city can be reassured: he is now back at the head of his own establishment, Bullion , which he has refined […]

In the 2018 CultureMap Tastemaker Awards, our annual event honoring the best in local food and drink, we spotlight categories such as best bars, best neighborhood restaurants, and rising star chefs.

We first ranked the 100 best restaurants in Dallas in 2011. Since then, the scene has changed so rapidly that it’s required us update it every three months. Which is what we’re now doing.

On the outside of downtown Dallas’ 400 Record Building, a tube of glass ascends from the sidewalk to a dining room perched above. Inside that glass ring, a spiral staircase whisks diners around a sculpture by Jean-Michel Othoniel that resembles a long, glittering necklace.

The most tasteful time of the year is here, with the 2018 CultureMap Tastemaker Awards, our annual event honoring the best in local food and drink.

In a region full of new and inventive ways to enjoy a meal, three North Texas restaurants caught the attention of Texas Monthly for its 2018 10 Best New Restaurants in Texas list.

Come December, my thoughts tend inexorably toward home, and so they turn just as predictably toward France, where I was born, and where the winter season brings memories of firesides and fattened geese. So it felt like an answer to unspoken prayers when chef Bruno Davaillon’s Bullion finally opened at the end of 2017, a restaurant to […]

Dallas may have been largely snubbed in this year’s James Beard Foundation Awards, but we fared pretty well in Texas Monthly‘s list of the 2018 Best New Restaurants in Texas.

Dallas has not lacked for new restaurant openings in the past year, but only two made the just-released list of 10 best new restaurants from Texas Monthly: Sachet, the Mediterranean-inspired restaurant from Gemma chef/owner Stephen Rogers and his wife Allison Yoder; and Bullion, the downtown Dallas restaurant from former Mansion chef Bruno Davaillon that offers a lighter take on classic […]

The mood a restaurant sets with music is as key to creating an environment as its decor. A recent visit to chef Bruno Davaillon’s opulent Bullion was a prime example of this. The lush vibes of ’70s R&B and Nu Disco tracks not only complemented the lavish midcentury modern space and plates of imaginative French-inspired […]

First dates can be nerve-wracking at best, and downright terrifying at their worst. Choosing the right location for your date night in Dallas is essential. Love is in the air thanks to Valentines Day this week, so take advantage of these stellar spots.

Love is always in the air when you book a table for two at one of these date-night-worthy North Texas eateries, from fancy-schmancy dining rooms awash in white tablecloths to more laid-back venues.

February has arrived, which means that it’s time for a fresh update of the Eater Dallas Heatmap, a monthly guide to the city’s hottest restaurants intended to answer the age-old question: “Where should I eat tonight?” This month’s update brings a few exciting new eateries to the Heatmap, including brand new Japanese restaurant Musume, and Fort […]

It’s been a year since Nick Badovinus opened Town Hearth—a steakhouse serving grilled turf and raw bar surf—to a thankful public in the Design District of West Dallas. Now word is spreading that the chef-restauranteur will be staking a tasty claim in the old Magnolia oil building at the crossroads of Jackson and Chavez, reports CultureMap. This 29-story […]

Dinner at Bullion is dramatic — moody, elegant, and the absolute definition of understated glamour. This is the general consensus around Dallas: Executive chef Bruno Davaillon has made magic with his cuisine, and designer Martin Brudnizki complemented it all with an interior that is, by far, the most beautiful of all the restaurants in town.

Over the weekend, I learned of the death of Paul Bocuse, who was perhaps the single most influential chef of the latter 20th century. He was part of the group that revolutionized not only French cuisine, but modern haute cuisine in general. Any chef who was influenced by the tenets of nouvelle cuisine owes him a […]

Chef Bruno Davaillon strikes gold with his take on classic French cuisine in a lush, glamorous setting. I can’t shake the feeling that I’ve stepped back in time and onto an ocean liner in a Turner Classic movie from the middle of the past century. Every clubby, subtly nautical design detail has been lovingly and […]

Dying for dining inspiration? The weekend is just a few short hours away, and if you still need a place to eat brunch, lunch, or dinner this weekend, Eater’s got your back.

Last year, we lost a lot of great restaurants (RIP Sissy’s), but we also welcomed some killer concepts. Now it’s time to forecast which of the newbies will be worth the buzz in 2018. From stellar interiors to creative cuisine, these new and soon-to-open spots are the ones we’re predicting will make a major mark […]

January can be a sleepy month in restaurant news, but not in Dallas, and not right now. We’re enjoying a bounty of new restaurants, new menus, new dishes, and new cocktails. Some of these items are available on only a limited-edition basis — meaning, you’re going to need to get out and try them quick […]

Local farmer Jeff Bednar was out delivering lettuce and herbs Thursday afternoon from his Lucas farm, Profound Microfarms, when he spotted something curious.

An unlikely star emerging from the boom in plant-based cuisine is the radish, a humble root vegetable that until recently has received relatively little love from chefs. Its meteoric growth rate, which market researchers at Technomic peg at 300 percent last year, actually took off just prior to the trend in vegetable-forward foods. Radishes received […]

It was monumental year for food in Dallas. The city’s restaurant scene flourished from start to finish – proving that it’s well on the way to becoming a culinary capital. While one iconic local dining room experienced a renaissance, several other soon-to-be icons made their debut. Let’s take a look back at the best new restaurants […]

Bruno Davaillon may have the only tamis in Dallas that gets a regular workout. This quintessential French kitchen tool consists of wire mesh stretched over a wooden hoop, and it looks rather like a giant tambourine.

Bullion, which opened in mid-November, is probably the most-anticipated restaurant debut in Dallas this year. It’s the brainchild of a Michelin-starred French chef, and the centerpiece of an over-the-top renovation of a 30-year-old downtown office tower — have you seen the golden Star Trek shuttlecraft that crashed into the side of the building? So it […]

I have a rule when it comes to dining out in Dallas: Nobody can order the same dish as anyone else at the table, and everybody has to give me at least one bite off his or her plate. It’s a delicious way to enjoy the city’s best restaurants, if you’ll pardon my reach.

Bullion Debut

THE PARTY The Hartland and Mackie families invited Dallas’ tastemakers to taste and toast the debut of 400 Record, the downtown building that showcased Michelin-starred chef Bruno Davaillon’s Bullion restaurant. No detail was overlooked at this lavish bash. THE GUESTSGuests were thoroughly entertained by performers pouring Champagne as they swung from chandeliers, acrobats twirling in […]

I’m sure most of you agree this has been a trying year. But I am not going to allow the holidays create any more stress in my life. To help you give tasty gifts this year, I’ve compiled a list of local restaurants, shops, and businesses offering thoughtful items to share with friends and family.

Hope you’re thirsty. The Dallas bar scene has welcomed many a new opening in the past year, some inside restaurants and others where cocktails are the main attraction. Here are the hottest new watering holes in the city.

Instead of braving the grocery store and being stuck in the kitchen during the holidays, consider heading to one of Dallas’ finest restaurants instead. The food is probably going to be better, and requires decidedly less clean-up. From fancy prix-fixe dinners to all-you-can-eat buffets, these 13 eateries are keeping the doors open on Christmas Eve […]

With the holidays looming, company’s coming, and you need a plan. You need dining options. Taking out-of-towners to eat is a multi-pronged mission. The restaurant you choose needs to welcome groups, represent your hometown, satisfy a variety of tastes, and hopefully not break the bank.

A new month has arrived, which means that it’s time for a fresh update of the Eater Dallas Heatmap, a monthly guide to the city’s hottest restaurants intended to answer the age-old question: “Where should I eat tonight?”

From elevated fast-casual to celebrity chef expansions, 2017 was packed with major restaurant openings around the U.S. Here are the 30 debuts from 15 markets around the country that had us the most excited this year.

Nestled in the heart of Downtown Dallas is a golden treasure brought to us by the legendary Bruno Davaillon, the Michelin-star former chef at the Rosewood Mansion on Turtle Creek. Recently opened in early November, Bullion is the realization of Davaillon’s dream restaurant; elegant yet approachable, upscale yet cozy, French yet contemporary. Don’t let the […]

Dallas dining action is at a pre-holiday peak, with important openings, new winter menus, and more restaurants jumping on the brunch bandwagon.

When the Dallas restaurant Bullion opens for business tonight, expect to fall in love with French cuisine all over again.

Bienvenue, Bullion! After last month’s extravagant VIP party, where acrobats twisted high above the crowds and fireworks lit up the sky, executive chef Bruno Davaillon‘s glittering new contemporary French brasserie is, at last, officially opening to the public today (Friday, November 17).
